You must try this recipe and the one below that accompanies it. You must shop for or get out of your garden 4 cups of cherry tomatoes.
Hereʻs the Balsamic Vinaigrette supplied by the Kraft Foods people. Itʻs a five star recipe and really good in my house.

Balsamic Vinaigrette
1/2 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1 clove garlic, minced,
1 shallot (green onion) minced
salt and pepper to taste
Combine in a glass jar, put the lid on and shake to combine. Refrigerate any unused portions.

Hereʻs two members of our tribe, Chrissie and Wally, sunbathing on the patio. Meanwhile, I have been working in my studio. Organizing projects and finishing an apron. Check out Mary Jane Farmʻs website. She sells a terrific apron pattern. Itʻs easy to make and customize to fit you.
You buy the pattern and have it reproduced as your local office supply shop. Itʻs worth the trouble as it fantastic as an everyday apron. If youʻre a messy cook like me, youʻll adore how much it covers your clothes. I used her Glamping fabric in red to make the latest apron. Itʻs for the motor home. Photo will follow.

Fresh Cucumber Salad

I found an awesome recipe for fresh cucumber pickle salad to be kept in the fridge. It was posted on Facebook and itʻs on the menu today. Youʻll need 7 large pickling cucumbers, several sweet onions and a red bell pepper, two quart canning jars, white vinegar, pickling salt and garlic. You can add your favorite spice, but in my house, itʻs garlic. Youʻll also need a couple weeks to let it sit and blend flavors. I know some of you will cheat. Itʻs OK. I donʻt wait either. Itʻll also keep in the fridge for two months.
Iʻll post the recipe after I try it out. Just hope our local farmers market has some pickling cukes!

Happy Independence Day

We have much to celebrate as Americans. We need to reflect on our freedoms. People have died so we can enjoy the life we have. Honor those who have gone before us, treasure the people around us, and give back to our country anyway you can, however you can. It can be as simple as smiling at a stranger. You have no idea what that person is going through, what kind of life this person is leading. A friendly smile could make a huge impact, maybe no. Do it anyway.
We are a land of immigrants. It doesnʻt matter when our ancestors came here, unless youʻre a native American, your relatives came from a different country. Mine immigrated here from Ireland, England, Portugal and I am proud to say a native American, a Hawaiian. Iʻm actually proud of it all.
So BBQ tonight, blow off some fireworks and have a great time remembering where we all came from.
Canning some pickled onions tomorrow in memory of my grandmother, whose parents came from Portual. I loved her dearly and will love every bite of these onions thinking of her. How great is that?
